My color gradients are labeled as Themes 1-7.
I did these settings for each.
The transition isn't smooth, is it because 7 is too many? or I need to understand the settings better, because I don't remember them really.

Off is smart haha thank you. But so far, this isn't even working for me when I try it on, only works in Studio, so not sure what I'm doing

Very cool! From what I see it looks like you got it working? About 10 seconds from one transition to the next?
One suggestion. I would include a second action to turn the transitions off, so that the user can go back to the default color.

oh that's interesting. it rearranges the order in the environment tab, but not the action one
